Mohawk Valley Food Trucks & Trailers was founded in 2010 by Ryan McEwen and Jaime Thompson after losing our jobs as steel fabricators. Initially, we focused on commercial ventilation systems, range hoods, stainless steel backsplashes, and countertops. One day, a local restaurant asked if we could build a mobile kitchen—and that request shaped the future of our business.

Today, we specialize in designing and fabricating mobile kitchens that are durable, user-friendly, and built to withstand the demands of a commercial kitchen. Whether you're a new entrepreneur or a seasoned pro, we offer both standard models and fully custom trailers tailored to your needs.

  • Recommended Trailer Size: 8’ x 16’

  • Essential Equipment:

    • Wood-fired or gas pizza oven

    • Refrigerated prep table with ingredient rail

    • Dough mixer or sheeter

    • Proofing cabinet (optional)

    • Handwashing and triple-compartment sinks

    • Ventilation hood and fire suppression system
